Lamb Casserole
Ingredients
- 2 cups diced cooked lamb
- 2 tablespoons butter
- 1/2 cup chopped onion
- 4 ounces sliced mushrooms
- 1 1/2 cups cooked rice
- 2 cans (14.5 ounces) tomatoes
- 1 1/2 teaspoons salt
- 1/4 teaspoon pepper
- 1/2 teaspoon curry powder
- 2 to 4 tablespoons grated Parmesan cheese or shredded Cheddar or other
Method
- Cook onion in butter until tender.
- Add mushrooms and brown lightly.
- Combine all ingredients except cheese in a greased 2-quart casserole.
- Top with the cheese.
- Bake at 350° for 30 minutes, or until hot and bubbly.
- Serves 4 to 6.
