Lamb Casserole

Ingredients

  1. 2 cups diced cooked lamb
  2. 2 tablespoons butter
  3. 1/2 cup chopped onion
  4. 4 ounces sliced mushrooms
  5. 1 1/2 cups cooked rice
  6. 2 cans (14.5 ounces) tomatoes
  7. 1 1/2 teaspoons salt
  8. 1/4 teaspoon pepper
  9. 1/2 teaspoon curry powder
  10. 2 to 4 tablespoons grated Parmesan cheese or shredded Cheddar or other

Method

  1. Cook onion in butter until tender.
  2. Add mushrooms and brown lightly.
  3. Combine all ingredients except cheese in a greased 2-quart casserole.
  4. Top with the cheese.
  5. Bake at 350° for 30 minutes, or until hot and bubbly.
  6. Serves 4 to 6.
