Chocolate Jus

For use with Game, Beef or Braising Joints

Ingredients

  • 4oz of dark chocolate- grated or chopped into small pieces(70%-80% coco content)

  • 1/2 Pint demi glaze

  • 2 Tablespoons of Port

Method

  • Add the port and demi glaze to a sauce pan and cook for a few minutes

  • Stir in the chocolate and cook slowly for a few more minutes
