Chocolate Jus
For use with Game, Beef or Braising Joints
Ingredients

4oz of dark chocolate- grated or chopped into small pieces(70%-80% coco content)

1/2 Pint demi glaze

2 Tablespoons of Port
Method

Add the port and demi glaze to a sauce pan and cook for a few minutes
-
Stir in the chocolate and cook slowly for a few more minutes
