Monkey Gland Sauce
For use with Steak, Pork, Chicken, Turkey and Veal
Ingredients
- 6 Medium sized mushrooms
- 10ml of brandy
- 1/4 Pint concasse
- 1/4 Pint cream
- 2 Tablespoons of demi glaze or juices from the meat while cooking
Method
- Add the mushrooms to a pan and cook for a few minutes
- Add the brandy and flame
- Add the concasse, cream and demi glaze
- cook for approx 7 minutes
- Season to taste
