Monkey Gland Sauce

For use with Steak, Pork, Chicken, Turkey and Veal

Ingredients

  • 6 Medium sized mushrooms
  • 10ml of brandy
  • 1/4 Pint concasse
  • 1/4 Pint cream
  • 2 Tablespoons of demi glaze or juices from the meat while cooking

Method

  • Add the mushrooms to a pan and cook for a few minutes
  • Add the brandy and flame
  • Add the concasse, cream and demi glaze
  • cook for approx 7 minutes
  • Season to taste
