Red Wine and Redcurrant Glaze
For use with Lamb and Game Dishes
Ingredients
- 1 Tablespoon redcurrant jelly
- 1/2 Tablespoon tomato puree
- 100ml red wine
- 50ml dark sherry
- 50ml chicken stock
- Teaspoon of rosemary
Method
- Place all ingredients into a sauce pan and reduce gently until required consistency
- Butter can be whisked in at the end for a glossy look
