Red Wine and Redcurrant Glaze

For use with Lamb and Game Dishes

Ingredients

  • 1 Tablespoon redcurrant jelly
  • 1/2 Tablespoon tomato puree
  • 100ml red wine
  • 50ml dark sherry
  • 50ml chicken stock
  • Teaspoon of rosemary

Method

  • Place all ingredients into a sauce pan and reduce gently until required consistency
  • Butter can be whisked in at the end for a glossy look
