Rossini Sauce

For use with Fillet Steak, Chicken, Duck,Veal, Pork or Lamb

Ingredients

  • 50ml of Massala
  • 1/2 Pint of demi glaze
  • 2oz Smoth pate
  • 1/2 Onion , finely chopped

Method

  • Add the onions to a pan and cook for a few minutes
  • Add the massala and simmer for a few minutes
  • Add the demi glaze and bring to a simmer
  • Add the pate and stir until dissolved
  • Season to taste
