Stroganoff Sauce

For use with Beef, Chicken,Turkey, Pork, Veal and Lambs Liver

Ingredients

  • 1oz Gherkins sliced
  • 1/2 Onion sliced
  • 1 Teaspoon of lemon juice
  • 1 Teaspoon of paprika
  • 10mls brandy
  • 1/4 Pint concasse
  • 1/4 Pint cream(or low fat alternative)

Method

  • Add the onion to a pan and cook for a few minutes
  • Add the brandy and flame
  • Add the paprika and cook for a few minutes
  • Add the lemonjuice, concasse and cream
  • Cook for a further 5-7 minutes and taste for seasoning
