Tolstoy Sauce

For use with Game, Beef, Pork, Lamb, Liver or Chicken

Ingredients

  • 1 Onion, sliced
  • 1/2 Green pepper, sliced
  • 1/2 Red pepper sliced
  • 1 Clove garlic
  • 6 Medium sized mushrooms sliced
  • 1/2 Glass red wine
  • 1/2 Pint demi glaze
  • Seasoning

Method

  • Add the peppers, onions,garlic and mushrooms to pan and cook for a few minutes
  • Add the red wine and reduce by half
  • Add the demi glaze and simmer for 5 minutes
  • Season to taste
