Tolstoy Sauce
For use with Game, Beef, Pork, Lamb, Liver or Chicken
Ingredients
- 1 Onion, sliced
- 1/2 Green pepper, sliced
- 1/2 Red pepper sliced
- 1 Clove garlic
- 6 Medium sized mushrooms sliced
- 1/2 Glass red wine
- 1/2 Pint demi glaze
- Seasoning
Method
- Add the peppers, onions,garlic and mushrooms to pan and cook for a few minutes
- Add the red wine and reduce by half
- Add the demi glaze and simmer for 5 minutes
- Season to taste
